Fava, a popular address in UB City has been dishing out some of the most mouth-watering delights for the longest time. But now Fava holds a special place in my heart, thanks to the new entrants to their menu that comprises of ingredients that are locally sourced, sustainable and made with oodles of love. From single origin artisan chocolates to the choicest of vegetables and meat, ooh and liquid nitrogen ice creams and cocktails, well what’s not to love about the all new Fava.
Chef Abhijit Saha, the owner and head chef at Fava has brought in the best of Mediterranean flavors combined with his knack for photography and Shruti, his wife’s beautiful flamingo candles, to make this place nothing short of irresistible.
A sneak peek inside and you’ll instantly fall in love, from beautiful pastel shades that adorn the walls, baby pink and light shades of teal giving out clues of it’s Mediterranean influence.
Missed your annual holiday this year? Why not step into Fava to be transported to a Mediterranean haven, trust me, this is one mini-holiday that I would highly recommend. Located on the 2nd floor of UB City, this place is nothing short of amazing, they have an al-fresco seating area, an open bar and lots of flamingos to keep you company.
I was invited by Fava to check out their new menu built on the pillars of sustainability and good health. The ingredients on the menu are farm-fresh, locally sourced and organic. So we’re talking chocolate from our neighbors in Mysore, hormone-free chicken and the freshest catch from deep-sea fishing. Finally, someone is taking charge to help our poor farmers and to make our lives healthier one meal at a time. Kudos to Chef Saha for taking up this initiative and being one of the few responsible gourmets in the industry.
We started off by heading straight to their open bar(on a Tuesday afternoon :P) drawn by the sight of liquid nitrogen and thoroughtful intrigued to add a new word to our grub dictionary – Cryo-cocktails. One of the best kind of cocktails, made using liquid nitrogen to create frozen treats that simply melt in your mouth. My first sip of Morgan Colado transported me to a whole new world – made out of pineapple juice, coconut cream and Captain Morgan spiced rum. Decidedly, a match made in heaven.
We also tried the Mango Martini, Pink Bramble and the humble Virgin Mojito, but my heart goes out to Morgan, yes I think I’ve fallen in love with Cryo, you know what they say about finding love in a hopeless place.
Next stop, we took a seat on the inside seating area to be treated to some of the most decadent, yet healthy dishes from their new menu. The first to make it’s way to our table was the Watermelon and Feta Cheese salad with pomogranate, arugula, a generous drizzle of balsamic vinegar, a platter full of everything fresh, a perfect dish to fight the Indian summers.
Who doesn’t love a good salad right? The next one that graced our table was the beautiful Baby Carrot, Orange and Asparagus Salad that came with a zesty orange dressing.
Another hot favorite was the Father Michael’s Valombrossa Burrata, all hail Father Michael (the man behind some of the best cheese in Bangalore) for this dish made of the freshest Burrata cheese , on a bed of beetroot mezze, dukkah and topped with popped amaranth was nothing short of delicious. A must try, it would make for a cheesy, yet unforgettable experience at Fava.
Some of the Non-vegetarian appetizers that made a mark were the Plated Smoked Salmon Labneh, tender slices of smoked salmon combined beautifully with the slight sweet Labneh and Chermoula Grilled Deep Sea Prawn which came with a creamy organic hummus and a touch of paprika.
We slowly worked our way to the Main Course, I opted for the Pistachio and Walnut crusted halibut, a soft tender (the melt in your mouth kind) fish fillet with a slightly toasted crust giving it a lovely texture, served on a bed of char grilled vegetables and parsley-arugula vichyssoise that was bursting with flavors.
Healthy food can be incredibly delicious too, a bite into the Mediterranean Stir Fry with Millets and Black Rice Risotto will teach you just that, a lovely mix of textures, especially that of the black rice giving this Italian favorite a new healthy twist. Definitely a must try.
Coming to the last and my all time favorite course- Dessert. We were treated to a guilt free Chia Seed Pudding with Red Grape, one of the few desserts that will leave you feeling light and ready to take over the day ahead.
Another one of my favorites was the Lemon and Mascarpone Cheesecake, a blissful baked cheesecake served with a lovely crumble and lemon cream.
All the chocoholics out there, don’t worry, they haven’t forgotten to add a Turkish Coffee and Chocolate Pudding to appease all your chocolate craving, here we’re talking serious chocolate, this one is extremely rich and if you’re not a fan of chocolate, then stay far far away.
Now for the best part, they also have a small ice cream counter that they call -196 degrees Celsius that creates some of the creamiest frozen treat. I vouch for their Kiwi Shorbet, extremely light, again with no added sugar, making it my go to option on my next visit to UB.
If you’re looking for something a little more indulgent, you could try the Decadent Belgian Chocolate or Caramel Popcorn. So if you’re short of time, you can grab yourself an ice cream and maybe decide to plan that Mediterranean holiday the next time round.
Overall I absolutely adore this place, in terms of service, their focus towards sustainability and some seriously good food. Except the slightly wilted mint leaf on my cocktail, there the food snob in me has spoken (aside from this tiny detail), everything was nothing short of perfecto 🙂
I can safely say that this is one of the best restaurants I’ve been to in the longest time. Another reason I love this place is because of their local outlook, this is something very close to my heart. Its funny how as Indian we’re looking all over the word for exotic ingredients, but fail to embrace our very own local staples that are equally healthy and full of interesting flavors. Kudos until next time 😉
